What a trip! I haven't planned for a big trip in AGES, and I loved getting a glimpse into your method! (Also totally here for some "strength-based marriage" talk when/if you decide to write about it!)
I went to Scotland for the first time last summer and absolutely loved it. We started and ended in Edinburgh, but went to the Orkney Islands as well, and Inverness, and Balmoral.......all just magnificent.
Sounds like a lovely trip! Love all the bookstore visits. My husband and I just got back from Amsterdam, Bruges, and Paris. We were also intentional about not having a lot of plans. It was great! We walked a ton in the mornings and evenings in Paris and spent a couple of hours each afternoon drinking wine and eating croissants in bed in hotel robes. (Marriott!)
The timing of this post could not be more perfect as I am headed out on a Northern Ireland/Edinburgh trip in a few days! I already have a map with some things pinned but definitely adding some of these (yay to book stores and walking around)!
As someone who recently has ability issues this makes me very happy to hear about Edinburgh, as well as the menu/allergy care. I've been to England (Manchester and Liverpool), but not beyond. I have been itching to go back. You describe the way I like to travel, low stress, flexibility, ok with canceling, and time to rest and really feel a place. This whole post was so lovely! Thank you for sharing.

We did Ireland many years ago and it is just a lovely place to visit with wonderful, welcoming people. Highly recommend.
But since you also mentioned Spain, YES TO SPAIN. I am partial since I lived there, but it really is just wonderful. Barcelona is a phenomenal city. Buy my heart is partial to central Spain-- Madrid, Toledo, Segovia. We are taking our girls this summer and I can't wait. They do serve a lot of shellfish... I don't know how they handle allergies!
If you're not sure about haggis, a lot of places do serve a vegan haggis so you can get the idea! It's delicious.
I still think about Dishoom from when I was in London last October. The best.
